RECIPE | Crockpot Butternut Squash Soup

Butternut Squash Soup & Harissa Hot Sauce

Jamie made butternut squash soup last year during the Superbowl. It was the first time I’ve ever had it and it was freaking delicious. I’ve always been afraid to make it for some reason but after I tried it, I told myself I’d get over it so here we are.

I’m not sure what she puts in hers but hers tastes better. After putting in Harissa Hot Sauce, the spice level was perfect. I found this at World Market last week. Comparing it with Scruffy’s family’s recipe, this one is smoother and much spicier. I’m just happy I don’t have to make it myself now!

Colouring & Westworld

Colouring and Westworld tonight has been peaceful. This isn’t even my entire colour set! I haven’t coloured in a long time and June pointed out, when she saw me at it again, that I usually colour when I’m unhappy or stressed about something. I looked back on the dates of when I completed the pages and I realized it always takes me a while to figure out why. I’m not sure why I’m colouring now but I’d like to think it’s because I just want to.

Ingredients
  • 1 medium butternut squash peeled, seeded, and roughly chopped
  • 1 medium yellow onion roughly chopped
  • 4 cloves garlic
  • drizzle of olive oil to taste
  • 3-4 cups vegetable broth
  • 1/2 tsp ginger grounded
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp thyme fresh
  • 1/4 cup coconut milk
Preparations
  1. Add all ingredients but the thyme and coconut milk into the Crockpot.

  2. Cover and cook on high heat for 4 hours.

  3. Blend until smooth.

  4. Add thyme and coconut milk and blend to incorporate.

Notes

For more heat, add in some hot sauce!

2019 Marble Falls | Day 3

I didn’t go to bed until after two in the morning. I watched two episodes so that I could finish season one before going to bed. That show gets you so mind f*cked I couldn’t stop! Definitely a great show if you haven’t seen it before. It’s one where you really have to pay attention. I can’t even play my games or multitask like I usually do!

Patricia and I decided to go the lazy route and stay at the hotel and eat our leftovers for breakfast. She went downstairs to grab herself some coffee and came back with a ton of sausages and potatoes. We watched the end to a movie before heading out.

Starbucks, Smart water, and Mexsnax Chichurritos

We stopped at Starbucks for some caffeine for our road back home. I got myself a pound cake but didn’t even touch it. My new favourite horrible for you snack is the Mexsnax Chichurritos in Chile and lime. I had these fresh back in Cancun at Wacko and Monica’s wedding and it brought back memories. Everyone knows I’m a potato chip lover but I think these might be better than that. Shocking, I know! And Patricia found out I can get them at HEB. Winning.

There were other breweries and distilleries I planned to take Scruffy at the time but since Patricia’s not much of that type of drinking and I have no one to share with now, one brewery was enough else I got to do pretty much all I wanted. Thanks for spending a relaxing weekend with me Patricia! I hope you had fun!

Now onto the last episode of the entire series of Game of Thrones. Did anyone watch it because I wasn’t entirely wrong with the outcome! All I will say is poor Ghost and his one ear.

2019 Marble Falls | Day 2

Patrica and I didn’t really want to get out of bed but we forced ourselves to shower and get ready for our pretty jam packed day.

We headed to Numinous Coffee Roasters for a morning caffeine fix.

She got a normal coffee and a Danish and I opted for a latte. I brought along some Bailey’s to pour into and it was perfect.

We started our twenty minute drive to Opie’s BBQ in Spicewood, Texas.

They had a plethora of meats for you to view and choose from!

We got the fatty brisket, jalapeno sausage, green beans, spicy creamed corn and tater tot casserole. The pinto beans and butter beans were free along with the condiments.

We had a hard time deciding what to try first! I obviously went with the green beans and she with the brisket.

My favourite was the jalapeno sausage. The casing was just right! I love eating the insides ad then the casing last so it was perfect! Everything else was too salty and I feel bloated now.

We decided and shared the Estate Grown Tasting Menu that came with seven different tastings. Also … Why is my eye so funky? Haha

I wanted to get a good shot with the Grapevines in the back but if you can tell, the rock the glass is on is darker because I spilled a bit of my wine when I tried to balance it. Fail.

We relaxed, listening to the stream flow and the wind blow while catching Pokemons and battling at the gym. I won!

As we were leaving we saw cows in the middle of the road so I jumped out and took some pictures. I’ve never seen cow poop until today and man are they HUGE!

We drove back to Marble Falls and went on Main Street for some shopping.

Patricia got a gelato while I did some souvenir shopping. Ghost pepper pickles for Dad, uncured bacon jam for BIL, pumpkin and turtle and owl decoration for Mum, and a little Rizzo for myself.

We bumped into a percussion instrument playground! I wonder if anyone ever actually comes and makes music together.

We made a stop at Bear King Brewery Co since I haven’t been to a brewery in a long time and it was on my list of places to take him at the time.

They had some IPAs on the board but I decided on ones I’d love more. The heffenwizen is my favourite over the porter which I was very surprised about. Since I didn’t have a significant other to help share, I had to force myself to down them all even though I was full to the brim!

We headed back to the hotel to relax a bit where I watched an episode of Westworld. Our hotel is near the lake which is nice but we weren’t lucky to have a room with a view.

Soon enough we were out the door to Rae’s Bar & Grill to meet up with Patricia’s friend, Nancy.

Patricia and I both got steaks and shared a side of Mac and cheese while Nancy ordered a burger. I’ve been craving steak so it was perfect!

We are currently sitting at Rae’s still listening to people sing karaoke. There are actually a lot of people here so I guess it’s the thing to do on a Saturday night here.

2019 Marble Falls | Day 1

Scruffy and I had talked about going somewhere international for my 30th and it obviously wasn’t happening so Patricia and I were going to go to New York and visit our friend instead. After seeing the prices we decided to postpone that to a later date. I was actually secretly planning a trip for him and I to Marble Falls and it’s surrounding places before we broke up so Patricia and I decided to go instead. I tweaked some of the plans to fit her instead of him and we’ve had a pretty grand day.

After a three hour drive I met her at the hotel and since we were too early, we decided to continue on with our plans and check in later.

Sweet Berry Farms was first on my list and I was surprised at how many people, especially children were out there. I guess there was a field trip or something.

I have always wanted to go to a farm and pick pumpkins, strawberries, apples, peaches, it didn’t matter. So I was super excited I finally got to do this and that mother nature was nice to us.

We began our strawberry picking adventure. There were so many to choose from but my favourites are the smaller ones. Some areas of the terrain were muddy and some strawberries were rotten but overall I can finally check something off my list. Patricia even got to enjoy a nice, cold strawberry popsicle.

I guess you could say we did a pretty dang good job. So many bright red deliciousness waiting for us!

We headed to Blue Bonnet Cafe afterward for their famous pie. There was a line out the door!

I opted for the waitress’s favourite, German Chocolate Pie while Patricia ordered the Coconut Cream Pie. Patricia told the waitress it was for my birthday and she was nice enough to put in a candle but didn’t have a lighter. How do I make a wish, lady?!

Overall, the pie was okay. It was way too sweet which is a given. But it’s definitely not something I’d stop by to get. House of Pies or Proud Pie is still a winner in my book.

Since Patricia was hungry we went to Noon Spoon Cafe.

2019 Birthday Present from Patricia

We finally checked into our hotel and I opened the present Patricia got me. I’m excited to try all the new makeup!! Thank you!!

We relaxed a bit at the hotel before going to an early dinner at The Real New Orleans Style Restaurant. Boiled crawfish?! Do you think we ordered that?

Because we did. Obviously. Along with boiled shrimp. It was spiced Cajun style. The flavouring was perfect but they could do better with their cooking time as it was overcooked.

We also got a cup of gumbo, green beans, crawfish mac and cheese, and French fries. The best thing was the crawfish mac and cheese. I’d come back just for that!

Showbiz Cinemas | Marble Falls, Texas

It’s been a long while since I’ve gone to the theater and we had decided to watch a movie together in the past since we rarely get to. Thankfully there was Showbiz Cinemas nearby and we got to check that off our friendship list.

We chose Pokemon Detective Pikachu because the nerd in me just had to see it. We ordered the tiniest box meal along with a giant water for me.

The movie was better than I expected and I was thrilled when I saw Snorlax on the big screen even though it was in passing. He was hairy, which makes him much more cuddly than ever. I do hope they make another one.

We have a relaxing day planned for tomorrow but it’s also supposed to rain so we’ll have to see how it plays out. Luckily I have my rain boots and rain jacket just in case!

I finally went back to work today. Still a cough but much less. It felt a bit weird being back after being out for so long but it also felt kind of right. I am glad I worked from home though because there was definitely less to do when I got back!

2019 Birthday Present from Delisha | Cornbread Dressing with Chicken

Upon arriving to work Delisha messaged me to meet her halfway to pick up my birthday present from her. She told me she was making cornbread dressing so I thought she was just going to give me a little bit in a tupperware and was surprised when she gifted me the entire pan! I am full and happy!

Starbucks Gift Card from Maria

Maria handed me a tiny card and I found a $50 Starbucks gift card for putting part of the presentation together and presenting at the townhall. I wished it was a gift card for the cafe because bacon but work Starbucks is better than nothing.

2019 Birthday Present from Erin | Storm Cloud Weather Predicting Instrument

Erin surprised me with a present after lunch. It was all wrapped with a nice bow. I’ve always wanted one of these though I’m never sure if it actually works or not. I am keeping it at work so others can enjoy it as well. This one is by far one of the cuter ones I’ve seen and I like the tiny size.

Game of Thrones Redo of Season 8 Petition

London sent me a screenshot of this. I doubt they’ll rewrite and reshoot season 8 of Game of Thrones but I cannot help but laugh and also feel sad that this is happening.

After work, Sissy came to drop off the pups and I went to get a manicure with her since she wanted to get her nails done.

Now to enjoy episode 3 of Westworld.
