I got to see Ann, Tony, Ryland, and Colsen today. It’s been less than a year since I’ve seen them and it’s been a long time coming. I loved seeing Ryland so lovingly attentive to Colsen. He’s such a great big brother!

Ann made some delicious chorizo breakfast tacos for brunch and I got to catch up with her. Tony woke up later from being drunk the night before and it was nice getting to catch up with him as well. I found out I liked Mexican Hot Chocolate Ice Cream. The punch of cinnamon really reminds me of winter time.

Korean Beef & Tofu Zucchini Noodle Stir Fry Ingredients

After a while, I left and headed to H-Mart for some goodies. Then it was a nap and Marvel movies until I started on my meal prep.

Korean Beef & Tofu Zucchini Noodle Stir Fry

I have no clue what to call it so I went with Korean Beef & Tofu Zucchini Noodles. You can pretty much add whatever you’d like as long as you keep the marinade the same – give or take the bone broth depending on the consistency you want. I’m super excited for lunch tomorrow!

Ingredients
Marinade
  • 1/3 c brown sugar, packed
  • 1/3 c reduced sodium soy sauce
  • 1 Tbsp ginger, freshly grated
  • 1 Tbsp sesame chili oil, regular sesame oil is fine
  • 1 tsp Sriracha, or more to taste
  • a dash bone broth
Ingredients
  • 4 oz rib eye steak, sliced into thin strips
  • 1 pack medium firm tofu
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, sliced
  • 1 pack button mushrooms, sliced
  • 1 1/2 lbs zucchini (4 medium-sized), spiralized
  • 1 can water chestnuts, optional
Preparations
  1. Mix marinade ingredients together and add in rib eye steak and tofu. Let sit for at least 5 minutes.

  2. Heat olive oil in large skillet over medium high heat. Add in tofu slices and cook both sides until a hint of brown, about 3-5 minutes. Take out and set aside.

  3. Heat up garlic and add in beef. Cook until slightly finished, about 1-2 minutes. Take out and set aside.

  4. Add in onion and mushrooms and a dash of marinade. Cook until soft, about 5 minutes.

  5. Stir in everything until well combined. Allow it to simmer and heat through, about 2-3 minutes.

Notes
  • You can add or omit any vegetables or meat.
  • You can omit the bone broth. I just wanted it a little watery.
  • Add in a bit of slurry (cornstarch and water mixture) for a thicker consistency.

Spider-Man & Hawaiian Food

Alamo Drafthouse | Spider-Man: Far from Home with June

I woke up with Emmy laughter and was able to get some playtime before she had to leave to get back with her parents. A few hours later, June and I headed out to watch Spider-Man: Far from Home. This was a super cute movie. I cried from happiness and sadness. It’s crazy how much technology has advanced and will continue to advance!

I never watched Endgame but I knew the ending so what they showed, in the beginning, wasn’t much of a surprise but it’s made me want to go back and watch and re-watch all of them in the correct timeline starting with Captain America which I’m doing right now. Eep!

L&L Hawaiian Barbecue | Katy, Texas

Afterward, June and I went to L&L Hawaiian Barbecue. This has been on my list for years! But no one’s ever wanted to join me until today. They closed their other location and moved here.

We ordered one of each Musubi they offered. I have wanted to try these since forever. I will say that the meat to rice ratio is off but that’s because rice isn’t really my favourite and because I wish for more sauce in the rice. The two I’d order again is the Hawaiian BBQ Chicken and the Portuguese Sausage. June’s favourite was the Hawaiian BBQ Chicken as well and the Chicken Katsu.

We didn’t know the Musubis would be that big so we had ordered the BBQ Mix Plate as well. We tried a little bit of everything and packed the rest up. We agreed that the Musubis would be the best bet in the future since it’s pretty cheap and filling even with sharing! I guess I need to come back a few more times before deciding my final thoughts.

We went to HMart to walk off the food and headed home to relax. One day of working tomorrow and it’s the weekend! Luckily I get to work at home.

Crawfish & Noods

A long overdue crawfish session with Salim. It was apparently his second time having it and the first time this year. Who is this kid? We went to Jolynn’s since it seems to be equal driving for both of us. They’re more pricey and we didn’t really see many other customers there but their flavouring is still pretty great. I was surprised that he was okay with eating the heads!

Afterward, his fingers were burning and his lips were on fire so he suggested ice cream but he got too excited when I said there were a lot of boba places around so we ended up at Sharetea. I got the Taro Milk Tea and he got some kind of other milk tea. I wasn’t really paying attention. It was nice getting to talk nerdy stuff with him as we usually tend to be in a group.

Damian's Cucina Italiana | Houston, Texas | Tim & Tara's Going Away Dinner

Tim and Tara had a going away dinner tonight at Damian’s Cucina Italiana. She is so adorable with the decorations and games. It was crazy how Eric walked in and the girl he has been seeing for the last four months is My-Linh, a girl that I knew back in college. We pretty much just all sat together and caught up.

Free bread for the table. Tara was sweet enough to order a few plates of appetizers (breaded asparagus, calamari, and some type of gnocchi) for the table. I got lobster bisque and Shrimp Damian. I was so full that I gave some of my food away. Every single thing there was delicious. This might just be my favourite Italian restaurant now. Well worth the money I spent. My-Linh was sweet enough to pay for my old fashioned. I don’t suggest ordering an old fashioned there though because they splashed in tonic water which is not how it’s made so that was a bummer.

Today has been filled with delicious foods that my stomach is a little too happy. I’m going to try and fit in a bit of studies before bed and maybe finish Chernobyl. Night, world!

Sissy came over this morning and we all ordered IHOP takeout for breakfast. Afterward we played with Emmy for a while before Sissy, June and I headed to the new skin care store.

We thought they were connected since they technically are but you pay separately. Me and June’s haul. The Panda’s Dream from Tony Moly is one of my favourites! It really does make me feel a little more awake.

I bought the two blue products from It’s Skin. The rest are June’s. Pore tightening serum and moisturizing mist. I just used both of these tonight and so far I’m feeling refreshed.

Beard Papa's | Katy, Texas

We stopped by Beard Papa’s, a place we’ve been dying to try. They are adorable but also costly. Each one costs almost $4!

They kept some festivity going with the sprinkles so they get some points there. As for taste, they’re not my favourite. We all agreed it’s not something we would ever crave and to be truthful I felt they tasted pretty much the same. We got vanilla creme in all of them but each shell is a different flavour.

Mum wanted us to take some boba back home to her so I got a Hazelnut Milk Tea from Yan Tea for myself. Verdict? Too sweet and way too much ice. More than half of my drink was ice! I was very disappointed since it’s not cheap at all! Definitely not coming back here especially because they were so disorganized.

Bang Energy Drink

During breakfast Justin talked about Bang energy drinks which ended us in going to the convenience store downstairs. I will say that the rainbow unicorn was delicious but it is definitely too much for someone that usually only drinks water.

During lunch Vicki and I went to Grotto downtown. It was a long walk but it was nice to get away from the office. Plus the decor was so adorable!! And the food was good. We even stopped by Phonecia’s on the way back and picked up some cookies for the team.

Eating Horribly

After work Scruffy and I met up to give each other our stuff back. This didn’t include gifts for one another though. And later through texts and phone calls we decided to try out being friends and see how it goes. We talked about what ifs like if one of us had a significant other and they didn’t like our friendship. We decided to cross that bridge when it happens. I also joked if he’d ever be my bridesmaids if I got married.

Mum and June got me a taro smoothie from Kim’s Teahouse and I got delivery from Panda Express. Don’t worry, I didn’t eat it all.
