Happy Valentine’s Day, lovies!! I started off the day with a lip mask from Sephora. It actually worked pretty well in my opinion. Perfect for Valentine kisses. haha Just kidding.

I’ve been asked if they were professionally made by a few people and was surprised when he also asked. I guess I should start a rice Krispies business. It might actually help me rake in some money since I’m unemployed.

He let me chose the restaurant, treating me to Cafe Caspian. We started off with Hummus, Sabzeh, and Tandoori Bread.

By the time our main meals arrived, lamb shanks for me and Kubideh for him, we were a bit stuffed and nibbled on a bit packing the rest to go.

Taiwanese Popcorn Chicken

I decided to try out Mum’s new fryer and made Taiwanese Popcorn Chicken, recipe below. I was surprised how well they actually turned out. I thought it would have been a hot mess and everyone complaining.

I was surprised every single piece of chicken was polished off along with other foods we had on the table!

Taiwanese Popcorn Chicken

Taiwanese Popcorn Chicken


Course: Appetizer, Main Course, Snack
Cuisine: Asian, Chinese, Taiwanese
Servings: 6 servings
Ingredients
Marinating
  • 1 1/2 lbs boneless, skinless chicken thighs
  • 1 medium head of garlic
  • 1/2 inch ginger
  • 3 green onions white and 1-inch of the green part, minced
  • 2 tbsp soy sauce
  • 1 tbsp mirin or rice wine
  • 1 tsp potato starch or corn starch/flour/breadcrumbs
  • 1/2 tsp Chinese Five Spice
  • 1/2 tsp ground white pepper
  • 1/4 tsp cayenne pepper
Coating
  • 1 eggs
  • 1/2 cup cold water
  • 2-3 cups potato starch
Frying
  • 3-4 cups peanut oil or vegetable oil
Serving
  • Leaves from 1 bunch of fresh Thai Basil
  • 1 tbsp salt to taste
  • 1 tbsp white pepper to taste
  • 1 tbsp cayenne pepper to taste
  • 1/2 tbsp sugar to taste
Preparations
  1. Remove the fat and cut the chicken into 1-inch chunks. Place in large bowl.

  2. Make the marinade by adding all the ingredients to the bowl of chicken. Mix to coat all the chicken. Cover with plastic wrap and refrigerate for at least 30 minutes to overnight.

  3. Once the chicken is done marinating, beat the egg with the 1/2 cup of water in a bowl. Place the sweet potato starch in another bowl.

  4. Heat the frying oil until it reaches 350˚F.

  5. While the oil is heating up, dip the chicken in the egg mixture first, then in the potato starch.

  6. Once the oil reaches the right temperature, fry the Thai basil leaves for 30 seconds or until they darken.* This helps flavour the oil. Scoop them out and lay them on a wire rack or a plate lined with paper towels to drain off the excess oil.

  7. Fry the chicken pieces for about 5 minutes or until golden brown. Make sure not to add too many pieces into the pot. Scoop them out and lay them with the leaves.

  8. Immediately toss with generous amounts of salt, white pepper, cayenne pepper, and sugar, to taste.

Notes

*When frying Thai basil leaves, keep in mind of the big splash back due to the moisture in the leaves. I used a fryer and had a lid I quickly closed as I lowered the basket into the oil.

I met up with Scruffy at The Halal Guys for a late lunch before heading to WalMart to pick up something for Jameel’s birthday. We opted for candy, every little kids favorite and not so much the parents.

After the party, I went home to have dinner with my parents and am now rewatching a TVB series, Tiger Cubs.

Catching Up With Old Co-Workers

Met up with my old co-workers today for lunch at Saeed’s Meditteranean Grill and got a free meal from Erin! Thanks, Erin! One of my favourite meals is Mediterranean so I was super excited to stuff my face! I got the eggplant casserole for the first time today and it was THE BOMB. Way better than baba ganoush!

Beans Cafe Coffeehouse | Houston, Texas | Iced Coffee

After many hours with Angie, Erin, and Paola, Juhi and I bid them all farewell since they had to go back to work. Juhi and I went to Beans Cafe Coffeehouse for a long coffee chat and she was nice enough to pay for my coffee. It was nice to talk to her one-on-one. It felt like it was when she was sitting next to me! I’m excited I get to see her again Tuesday night!!

After you spend so much time with them daily and having it taken away in a blink of an eye is tough so I’m glad I got to see them again and catch up with them.

Scruffy and I went for lunch at Phonecia Specialty Foods for some Shawarma. After, we took a walk around the store where I bought some Sumac and cheese. Yum.

I enjoyed a cup of Yogi Energy Tea while working on my blog stuff and recipes. Scruffy hung out with BIL until Sissy came home from work.

Rockets vs Heat

It was a pretty last minute decision to go to the Rockets vs Heat game but I was excited we were going since it was the Mix & Match event.

It was a nailbiter throughout the whole game but we persevered and won at the end!

Reunions, Oreo Cheesecake Macaron, and Feasting It Up

Last week was one of the busiest I’ve had in a long time and I loved it!

Tuesday, October 17th

Trisha was in town for work and was able to hang out for a couple of hours. We chose Jinya Ramen Bar – perfect timing since it was happy hour time.

We ordered so much food. The best thing there are the buns! (We both had two each.) It was sad to see her go but always swell getting to catch up with her busy life. This was also the day I got a nail in my car. Whomp, whomp. Luckily whenI took it in the next day, they were able to mend it for free! #winning

Wednesday, October 18th

The food isn’t the best I’ve ever had but it was good enough to where I’d come back. I prefer the gyro meat over the chicken shawarma. The chicken was too dry. If you run out of pita, just ask them for more, it’s free!

Thursday, October 19th

Zuco and I signed up to do a wood painting class but due to food poisoning on my end, we had to cancel. Luckily we were able to get the materials from the “teacher” and do them ourselves.

I finally got to see her new place and we ate pizza with Kemp before we started. It’s so rare to see her nowadays so I cherish it tremendously.

Friday, October 20th

I went and picked up breakfast for Ann and I at Los Balito’s Taco Shop then I headed to Ann’s parents’ house where we caught up. I haven’t seen or talked to her like we did in forever so it was nice to do so.

I finally got to meet little Colsen. He is so adorable! And so much hair! Reminds me of his Uncle Tony. Soon enough it was his nap time and time for me to skedaddle. I went and picked up my contacts, cashed in a check at the bank, went to WalMart to pick up parchment paper, and gased up the car. I sat waiting for Juhi since her doctor’s appointment ran late.

An hour plus later, Juhi arrived and we started our baking. I measured out the ingredients as she chomped down on Whataburger. We’ve been wanting to make macarons and finally found a day we were both free!

Her roommate had these two kitties … furless kitties. They’re so playful. I describe touching them as like when a guy shaves his head and you touch that. Exactly the same.

When we were waiting for the macarons to set on the counter, I met her pet hamster. Cutest and shyest little thing. Soon enough it was time to put the first batch in the oven. We were worried they were going to turn out horrific.

The majority came out looking like this. Shiney top shell with a foot! We were so proud. Especially since we went through a lot of trail and error to get to this point!

The final macaron in all its glory. We definitely put way too much filling inside. Whoops! But we were proud of them regardless. I went to Scruffy’s afterward for dinner of ribs, shredded pork, and coleslaw. A little bit of Super Mario, Astros, then bedtime.

Saturday, October 21st

Rami invited us over to hang out along with his parents so for lunch we went to Hickory Hollow. I wouldn’t say it’s the best chicken fried steak since the breading falls off but it’s not bad. The best thing there are the hot tots so don’t forget to order those.

8th Wonder Brewery | Houston, Texas

After hanging out at his place a while longer Scruffy and I left and headed to Sissy’s and BIL’s where we later walked to 8th Wonder Brewery. I didn’t really drink but I didn’t mind sitting there. They changed up the place so now it’s indoor with ac. I guess they realized how much business they lost in the summertime.

We went back to their place where we played board games, grilled and had dinner, and watched the Astros game. RIght when the game ended Scruffy and I scurried away so that we wouldn’t get stuck in traffic. Once we got back he went to play video games with his buddies and I watched telly while I searched for jobs before heading off to bed.

Sunday, October 22nd

We woke up and headed over the Andrew’s. Scruffy’s usual Sunday plans. How cute are they?

Then we went to Ramble Creek Grill for burgers.

Scruffy opted for tater tots which I will say tastes way better than the fries.

I opted for chili cheese fries and I’ve decided next time I come, I’ll just get the tater tots and ask for the chili cheese to be on the side so that they stay crispy. Also, their bacon isn’t good for burgers. They fry it up real nice so it tastes delicious but the way they curl up does not fit in the burger. Instead if took it out and shared it with Scruffy to eat like a chip. Also the egg didn’t run so that made for a sad reveal.

Since there was so much to do on the weekends, it went by too quickly. I cannot wait for a free weekend to do nothing but relax. Scruffy and I have coupons for a massage and I so badly want to use it soon.
