Thursday, April 14th

I worked until almost 6pm. I had plans to go be at Frankenstein’s by 6pm! It was crazy but pushing through and finishing chapter one of my paper for work class was worth it because coming back Monday, I didn’t have to worry too much about it.

Anyway, I finally made it to his place after 7pm and he pranks me by making me think he packed the smallest duffle bag for the trip because I tend to pack “a lot”. Hey, I’m a girl. We have more things!

I hadn’t eaten all day and only drank one bottle of water. My hands were shaking and although I was not hungry I knew I had to eat. We watched Ronny Chieng Speakeasy on Netflix and ate our DoorDash Wingstop for dinner and headed to bed.

Friday, April 15th

We wake up SUPER early for our 6am flight. We both like being at the airport early. Yay. We were lucky and got the whole row to ourselves. I mostly played on my iPad and watched Flashpoint before opting to sleep with music in my ears.

We arrived at Phoenix, picked up our bags and headed to our rental car. We were upgraded twice and went on our merry way. It was the one we initially wanted but realized wasn’t necessary so it all worked out.

We started driving to Flagstaff stopping at Original Breakfast House since we hadn’t eaten yet. There was a wait and they even had a sign that if it was a busy day, your group will only have an hour and a half before getting kicked out! How crazy!

The food was better than expected, and they give you a lot! We both had leftovers. Frankenstein’s tamales were perfect. The masa was super sweet to me as well but he thought they tasted normal. I opted for the biscuit and ordered their sausage gravy to go with it. The biscuit was sweet which was weird for me. Also having asparagus in my hash was different. Not a fan but I ate all the veggies I could.

This place has cinnamon rolls which I really wanted to order but was so full to do so. The whole time I was there, I noticed every few minutes another cinnamon roll was being served to another table so it must be a hit!

When we got to Flagstaff we parked the car and walked around downtown. We mostly went into shops I looked up and wanted to check out.

He just wanted to take pictures of downtown so it worked out since I dragged him everywhere. We stopped by Macy’s European Coffeehouse & Bakery for a quick pick me up before continuing around downtown.

Afterward, we stopped by Lowell Observatory. My man loves all things space and this is the place where Pluto was discovered!

I typically dislike tours or “lectures” as they put it but our lady was THE BEST. I did not fall asleep and I retained a lot more information than I thought I would. Either I have to admit to Frankenstein that this shiet is interesting or maybe, just maybe, this is literally the best tour guide ever.

The telescopes are GIANOURMOUS. I was actually disappointed that it was too windy to use. Luckily their cluster of smaller (compared to the giant ones but the cluster is still huge) telescopes were able to be used later in the night.

Chef’s Tasting Menu | four courses + intermezzo | $70/person

We checked into our little house we rented. It was super cute and perfect for just the two of us. We laid around for a bit since we hadn’t really stopped since we arrived and then made a pit stop at Basha’s for water. Then it was time to check into our reservations for our first anniversary dinner celebration at Shift.

We didn’t know what to really order so we opted for the Chef’s Tasting Menu. Our first ever Chef’s Tasting Menu. If one person wanted to do it, everyone at the table had to.

We started out with tap water for me, sparking for him, and Paloma for me and a bourbon for him before our courses started to come.

  • 1st Course | Roasted Red Cabbage (fermented soy, Greek yogurt, pickled caraway seed)
  • 2nd Course | Mushroom Cavatelli (spicy miso beurre blanc, maple eel sauce, pea vines)
  • Intermezzo | Sorbet (evoo, sea salt, chevre)
  • 3rd Course | Escolar (coconut corn broth, piquillo relish, curry walnut dust, chive oil)
  • 4th Course | Mint Chocolate Churro (variations of chocolate, earl grey gelato)

I loved every course and if I had the money, I’d do tasting menus everywhere! It’s nice to get a bit of everything. We were both surprised about the cabbage and made me want to go home and try to do the same. It was better than I expected it to be. The dessert wasn’t bad. Nothing to write about but it was nice to have gelato since our first date was Menchie’s. He said it’s not the same since it’s not frozen yogurt but I’d like to think any form of ice cream, gelato, froyo is okay.

My favourite hands down was the sauce from the second course. If they mix that with the escolar from the third course, I think it would be the perfect pairing. Frankenstein on the other hand loved the third course.

My leaste favourite has got to be the intermezzo. The goat cheese and sea salt ruined the sorbet in my opinion.

We headed back to the Observatory after dinner to catch the stars. Sadly the moon was shining so bright that it was hard to get the kind of pictures we envisioned. They’re not bad but could be better. Next time, we’ll check the moon calendar before booking flights to see stars.

We looked through those telescopes I mentioned earlier and bought things at the gift shop as a memorabilia.

Saturday, April 16th

We woke up early and drove to Williams. We grabbed our Grand Canyon Railway tickets and ate a buffet breakfast at The Fred Harvey Museum. The tater tots and bacon were top tier. I joked I was going to snag some in my bag to eat on the train.

The ride was a little over two hours but it was better than driving an hour and wait to park for another hour. They kept us entertained. They had a newspaper with facts, information, and coupons for restaurants. And once in a while they’ll have stories to tell about an area we were passing by.

What really kept me entertained for a long while was the family sitting in front of us. The little girl kept trying to get our attention … until she passed out from exhaustion.

The little cross picture are communication lines they used back in the day from the Grand Canyon to Williams. It’s still up, even though they don’t use it.

When we finally made it to the Grand Canyon, we were let out and were free to roam about the whole entire area. We walked and took SO many pictures. I love that he is the same so there was no anxiety of “oh crap, I shouldn’t take one” because half the time, he was too. We walked into the market place area, shopping a bit before jumping on the bus to head back to the train.

I got off the bus prematurely which could have been catastrophic if we didn’t make it back to our train by the allotted time. Luckily the couple in front of us, as well as the lady managing how many people can get on a bus at a time, let us on. Whew. Then we had an issue where we couldn’t check in since internet up in the canyon was spotty. Yay boarding group C!

On the ride back we were stopped by the bad guys. They were literally on horses! And even had two of them get on the train and once the train started going again, they walked through demanding money. The kids LOVED it. I even heard one said, “see you later bad guys!”

When we got back at the depot, we walked around the shop and then drove back to Flagstaff. We passed by Northern Arizona University where Frankenstein’s coworker got their doctorate there. It was super pretty so he walked around for a short bit and got a few pics as evidence that he did check it out.

We decided on Fratelli Pizza for dinner. Two small pizzas that was still TOO much for us but we shoveled it down. Per usual, veggie meat pizzas are to notch. I was very surprised by artichoke on pizza though. I actually liked it although their sun dried tomatoes were too hard/chewy so I picked those off and gave them to him instead.

We were about to head back “home” when I realized the Observatory was still opened and I wanted to get the cap. He had gotten one but I was on the fence. Glad he was willing to go back so I could get it. It also gave him a chance to ask questions about one of the telescopes he was interested in to understand what programs it was using.

Sunday, April 17th

Our last day, we woke up later than all the previous days and made our way to Phoenix. I had found a family owned Mexican restaurant but when we got there, it was closed … Oh Easter.

He found out Chase Field was close by so while I searched for a new place, he drove around and snapped pictures the best he could.

We ended up grabbing food at Gallo Blanco. Seriously one of the best Mexican foods I’ve ever had. Their al pastor is top notch although their guacamole could be better. Mostly because I’m use to the Texas way with a lot more vegetables and smooth. Theirs was SUPER chunky and I found a few avocado skins in there as well. Frankenstein said it’s to show how authentic it is.

We dropped off the car and went to the airport. We walked through different terminals to get our steps in and watched planes take off. With us being in boarding group C, we were lucky to find seats next to one another.

By the time we got back to Houston, I was pooped. We picked up our bags, got on a bus to get my car, drove him home, before heading home myself. Luckily I was home a little after 9pm which just feels like a regular day to me so work wasn’t too bad – especially since I got to work it at home.

Our first trip on our first anniversary was memorable. We did a lot and nothing at all. I came back, although tired, but refreshed. I’m not sure when our next trip will be but I’m ready …

Rizzo & Mellie Dee | Vet Specialist

February 25th

I had to take Rizzo to a vet specialist for a consult with his nose bump. It didn’t go as planned so currently waiting for the surgical consult then probably hit up another doctor for a second opinion. It’s going to cost over $5000 if I go to this specialist. Sigh. He’s still so young. I only hope it’s a bump, not affecting anything and isn’t cancerous.

Ethan, Mellie Dee, Pluto, Rizzo

February 26th

We had a blast with Ethan. So many good memories. He wakes up with a smile and laughter most days, He’s such a sweet boy and I’m hoping that never changes. Rizzo and Pluto had more sleepovers until we went to Dallas for Emmy’s birthday though and it was nice having two pups in my room again.

February 27th

I headed off to Jack’s 3rd birthday. This boy’s emotions are all over the place. Laughter and tears come so easily for him. Reminds me of myself.

It was nice to see Michelle and finally meet Luke! He’s a chonker and constantly had spit ups. It was like a mini high school reunion with Mallory, Nicole, and Karla being there.

Antique Market Puzzle | Space Nails

February 28th

I finally finished the Antique Market puzzle. It’s been forever. Having kids around definitely makes it harder to relax. I constantly worried if I’d miss a piece since he loves puzzles with his auntie!

I put on space nails as part of Frankenstein’s birthday theme.

March 3rd

We celebrated Frankenstein’s birthday a day early with me planning out the whole night as a surprise. He’s a lowkey type person but I figure turning 30 means I can at least decorate the Airbnb. After setting up the Airbnb, I drove and picked him up (hanging out with Artemis for a bit) to drive back since we only had one parking spot.

He was surprised when he opened the door but of course the first thing he notices is that the astronaut balloon had a “penis”. Although the whole night is his present, I figure opening one is always fun so I got him a Bob’s burger book and Szechuan peanuts. Nothing fancy but he was reading that book before bed so I know it was a good choice.

We noticed the water was out — wtf — and after contacting the people, they said it’d come back on so for the time being, since it wasn’t a hotel where we can grab drinking water, we went to two CVS locations in search of drinking water. The first one ran out! How crazy! I also forgot matches/lighter so it was a great excuse.

We got ready and headed to Xochi for dinner. It’s an experience here and I’m so glad he liked it. Sissy thought we were crazy for ordering so much food but it was worth it. He was worried they’d sing to him but luckily they put down the birthday dessert with a lit candle and walked away. We both are not big fans of being in the center of attention, especially at a restaurant.

We dropped our leftovers in the car and although our reservations to Pixar Putt was way later in the night, we took a chance and went an hour or so early.

They accepted us, thank goodness, and we spent almost two hours for 18 holes. They put in a lot of thought on the course although I wished there were more holes for more movies. Some of the obstacles were ridiculous but we had a lot of laughter from it. Obviously, at the end, he won. He always wins when it comes to golf. Sigh.

Frankenstein's 30th Birthday | Homemade Italian Cream Cake | Ukraine

We headed back to the Airbnb and was sad to see that water was still out! Which meant no showers which is a bummer since we stunk from being outside. I messaged them and with hopes they’ll reply, we enjoyed the nice weather on the sky deck with the beers I grabbed from CVS. He was so happy to see that downtown buildings were supporting Ukraine.

After awhile, I ran back inside for his last surprise. I made him stay on the deck until I finished putting on the astronaut topper and candles on the three tier Italian Cream Cake. I don’t know if he’s lying but when he asked where I bought it, I about died since I had made it all by myself the night before! He tells me it’s dang good so I’ll take his word since I’m not a big fan of coconutty things. (Shoutout to Mallory for lending me a cute cake holder.)

Also, praise to this man who was willing to help me clean up all the balloons even though I told him to relax. And we had fun doing it.

March 4th

We left our Airbnb right as we woke since the water was still out. He had taken videos of the water being out while I was still asleep which I used to get a full refund later.

We had breakfast at Snooze back in his neck of the woods. I didn’t like this place the first time I went but this time, it hit the spot. We spent a lot of time with Artemis, took a nap, ordered dinner from Little V’s and watched First Man before I had to pass out again. A chill night for a chill birthday boy.

March 5th

I left to pick up Sissy, June, and Mum and headed off to Dallas for Emmy’s 5th birthday. When we arrived, Brudda, SIL, Emmy, Ethan and Dad were on their way out to the kid’s portion of her birthday where they went and painted ceramics. Due to limitation of people being in the place, we opted out.

We ventured out to Yatai Ramen Japanese Izakaya, Sweet Hut, Sephora, CVS, and Kung Fu Tea before heading back to the house where we all took naps.

Emmy's 5th Birthday | Mellie Dee & June

Later that night, immediate family party for Emmy. We had dinner and cake and opened gifts. She has a short attention span so I was thankful she was able to sit through decorating and planting seeds for a mini unicorn garden I got her as well as making 9 out of 11 scrunchies with me and June.

Not certain she’ll have any more parties like this anymore. I’ll probably be more kids her age parties which I’ll be sad about so I’m thankful that although we were only up there for less than a day to celebrate her birthday, we had that time together.

2021 Christmas Shenanigans

Rizzo, Emmy, Ethan | Christmas Nails | Vet, Cracker Barrel, Christmas Wrapping

Monday started off with Emmy & I taking Rizzo to the vet. There’s a lump inside his nose and they were able to release fluids and take it to testing. Haven’t heard back and it’s refilled so hoping they can fully remove and it’s nothing bad.

I took her to eat at Cracker Barrel and walked around different shops before heading home. I changed my nails to Christmas lights and wrapped presents.

We also found out that Ethan put one of his toys into the freezer. Our freezer has been pooling and so his toy was frozen in. Such a hilarious moment and he wouldn’t let it go the rest of the night.

Emily's Taqueria | Capri Nails with Mallory | Physical Therapy | Emmy & Ethan | Dish Society

Tuesday I grabbed some breakfast tacos from Emily’s Taqueria and met up with Mallory for pedicures at Capri Nail & Spa. It’s the second time in a row that I’ve gone and their polish does not dry after an hour plus. I went to Physical Thearapy for my back/leg and shopped for a bit to get some nail polishes to fix my toes. I got some cool presents from Mallory – ended up winning $10 from the scratch off she got me!

Wednesday June and I took the kids on a walk with Rizzo. I ordered a deconstructed Chicken Pot Pie from Dish Society too. So good and perfect for the cold temp.

Mellie Dee's COVID Test | Ethan & Emmy Gingerbread House | Thaicoon

Thursday, I went and got my first COVID test – rapid PCR test. Negative! Whoo hoo! Good to know since I was feeling sick.

Ordered Thaicoon for lunch and then waited for June to be home to build gingerbread houses with Ethan & Emmy. They mostly just ate the decorations and icing.

Frankenstein & Artemis' Christmas Present

Later in the day Friday, I drove over to Frankenstein’s. I gave Artemis her Christmas present. A blanket where she can be seen and a harness and leash since he talks about wanting to take her out for walks in the future. She wasn’t a fan. I’m sure she wonders why this weird lady keeps bringing stuff for her to wear.

He went to San Francisco week prior for a wedding and came back with Ghirardelli chocolates for me. That’s when he told me that the original Ghirardelli shop was from there. Learn something new every day.

Moody Gardens | Frankenstein & Mellie Dee

This man planned Christmas Eve with me as my Christmas present and I couldn’t be any happier.

I guessed correctly that he chose Galveston and had an inkling it was Moody Gardens. And I was right!

He booked the Moody Gardens Hotel with a balcony view. I’ve never been on a balcony at a hotel before, at least not one that I remember so I was amazed. He opened his presents and we took a lot of pictures and videos of the view before getting ready for our dinner reservations.

He booked our reservations at Shearn’s, located in the hotel that supposedly had pretty dang good reviews. He was pretty disappointed in the food. It wasn’t terrible, but not worth it for the cost. I agreed but was just on cloud nine that this man planned a nice night so I didn’t have any complaints. He just felt bad since we’re pretty spoiled when it comes to eating out since we do that a lot with our distance. But he added that it wasn’t a big deal and he was just happy he got to spend time with me. Gah so sweet.

Moody Gardens | Frankenstein & Mellie Dee | The Festival of Lights

During dinner, he told me a mishap that occurred. He apparently accidentally booked ALL the excursions Moody Gardens offered. The regular ones year round and the holiday ones. He meant to only book The Festival of Lights since he knew we didn’t have much time to do much. Too funny.

We made it in time to walk through the entire thing to see the lights, stopping a lot due to my back. My favourite is the interactive Twelve Days of Christmas show. We sat there for the longest because I wanted to see all of them light up. Then we had a debate as to why certain things were even gifted. Love our random conversations.

Moody Gardens | Frankenstein & Mellie Dee | Cafe in the Park

We woke up quite early Saturday since one of his launches were happening at six in the morning. I caught glimpses of the launch but mostly fell asleep through it. When we finally got up, we had breakfast at the hotel’s Cafe in the Park. This place is SO darn cute. Even the carpet looked like grass. We opted for the buffet which had MORE than enough yumminess. I am starting to dig ordering hot tea at restaurants.

We packed our things and headed back home. I was able to get a shot of the Christmas decorations they had at the lobby without all the kids all over it. So gorgeous.

Extended Family Christmas | Ethan & Rizzo

I got home in time to relax a bit before Sissy & BIL came over. Brudda and SIL arrived the night before so we had a full house and it was nice. We made little window light catchers and played games before our extended family came over. A lot of crazy times and nice memories – like the kids loving playing in boxes like cats (surprised Rizzo went in and stayed there), and Ethan being a Pocky model.

Immediate Family Christmas | Ethan | Phanh Ky | Katy, Texas

Sunday was our immediate family’s Christmas. We had breakfast of kolaches and opened presents. Secret Santa (SIL) did great this year. Two new puzzles, one of which was a surprise — COSTCO puzzle! I’ve been looking and never found it. It’s only 500 pieces so you would think it’ll be easy but if you look at the picture, it’s filled with people on every corner. So excited!

We also tried out Phanh Ky & The Alley. The Alley was WAY too sweet for my liking and they ran out of a lot of things which makes me not want to go back in fear of not getting what I want again. But Phanh Ky was delicious. We talked about going back in the future. I like that you can pick different types of noodles to go with your dish.

Cidercade | Houston, Texas | Frankenstein & Mellie Dee

Knowing I’d be dropping off Brudda and SIL at the airport late at night, I was able to make day of plans to meet up with Frankenstein afterward at Cidercade. I’ve been wanting to check this place out so was happy he remembered and suggested it instead of me driving all the way to him. I wouldn’t have minded though because he loves SNL and have been waiting to watch the Taylor Swift one with me.

It was fun but they did have some broken games. I wasn’t a fan of any of their drinks and later at the end, found out they had sodas and waters in the back for free pour.

It’s been a very eventful week. I am still in awe that this man planned such a nice night together where I didn’t have to put in input (other than the food when we got there). He’ll be busy again soon so I’m trying to squeeze out as much time as we can this month.

Linda’s & Ricardo’s Wedding | Fredericksburg, Texas

Sylvia's with New Work Team & Cleaning Out Desk

I’ve started my holiday vacation since Thursday and won’t need to be back until the new year. If you haven’t noticed, the title to this post doesn’t say Quarantine anymore. Starting next year I’ll have to go in at least twice a week which means I’ve worked from home for 91 weeks. Isn’t that crazy?! I’ll miss it for sure.

Started off the week, Monday, with lunch at Sylvia’s with my new team. They hadn’t had their Christmas party yet so it was nice being invited and seeing everyone (minus one who works in Louisiana) in person. I’ve actually worked with all of them before in the past. Small world.

Although I might not start going in until mid January, I did go in on Thursday to pick up my boxes. It felt good getting rid of one whole box of manuals we’d never use again.

Timothy & Lillian | Tamashi, Starbucks & Potted Potter

Wednesday, I met up with Timothy and Lillian for dinner at Tamashi. I think it’s better than Jinya! Definitely need to go back again.

We stopped by Sarah’s to drop off some things making a run for Starbucks.

Then it was off to Potted Potter. I’ve been wanting to watch this since I saw the ads and am thankful Lillian loves Harry Potter enough to want to go. Super hilarious. The audience laughed the whole time and was very engaged.

Rakuu | Beth & Connor

Thursday, after the office, I picked up food from Rakuu and headed to Beth’s. Our last hangout before she’s off to Tennessee for Christmas. Connor has grown so much since I last saw him. Lots of smiles and laughter. Super fast crawler too.

Ethan & Rizzo | London Puzzle

A lot of Ethan time. We walked Rizzo with June to look at Christmas lights one night and Thursday, after Beth’s he and I walked to Walgreens for some things. Definitely have more endurance than Emmy.

In all that time watching Ethan, I was able to finish the London puzzle. For now with Emmy being here too, puzzles will most likely be put on hold if I don’t want any missing pieces.

Friday, I headed off to Fredericksburg. I skipped the wedding rehearsal and Daniel picked me up for the wedding dinner at the venue. They hired a taco truck to make us tacos and the family made beans themselves. Everything was so good. Patricia and I went and looked at lights after wards and there was even a German Christmas tree. Some of her family members showed up and then a few of us headed to Pioneer for a drink before heading to the Airbnb.

Saturday, I had brunch with Ana, Alex and Jocelyn at Emma and Ollie. The food was so delicious though I feel the bowl was overpriced for the amount you get.

By the time we got back to the Airbnb it was time to get ready and head out to the church for the ceremony.

Ricardo cried as Linda walked down the aisle and it was the sweetest thing. The whole ceremony was in Spanish (minus a few lines) so for someone not Catholic, I was a little confused what was going on but was able to get the gist of it.

We then headed off to the reception. The mariachi band played us some songs as we drank and snacked on chips and salsa.

Dinner was BBQ, buffet style. If I wasn’t in so much pain from my butt/back/leg, I would have gotten more. It was SO good.

I was able to snag a few pics with some folks, especially the beautiful bride and tired groom.

Mu fabourite is getting to see Lily since it’s been two years since I’ve seen her in person. I love her cute little hair. And it’s been a few years since Patricia, Lily and I got together. Wish we all had more time together, but being able to be with one another for just a bit is better than nothing.

Today, I woke up and hung out a bit with Jocelyn and Patricia before we all went our separate ways. I went off to Boerne to meet up with Amy at Peggy’s on the Green. We were lucky to find the Farmer’s Market was across the street so we headed there after brunch. It was a very short visit but any time with this one is always a great one.

It’s been a long week and this week won’t be any different. Luckily not having to work makes it a bit better.

2021 | Week 91 of Quarantine | Good Eats

Some of those week’s good eats. Delia’s from RVG, hot pot Saturday night, and Sunday: Eggcellence Cafe and Sushihana.

Thursday after work I went over to Mallory’s. Mostly to give her and Beth Delia’s tamales and thier Christmas presents because my freezer was packed. I picked up our order from Elyson Cafe and hung up a bit. Feels like forever since I’ve seen them!

2021 | Week 91 of Quarantine | Frankenstein, Sissy, BIL | J Bar M BBQ, The Houston Ballet: The Nutcracker

Friday night Frankenstein finally met Sissy and BIL. We had dinner at J Bar M BBQ and then went and watched the Houston Ballet: The Nutcracker.

I’ve always wanted to go to the ballet and am so thankful he agreed. We even got free Nutcracker masks. So fancy. The set and the costumes were so breathtakingly beautiful. Sigh. Makes me wish I was in theater.

BIL feel asleep for 40%+ of the performance and although Frankenstein struggled, he stayed awake for all of it. So proud. Sissy and I were on cloud nine the whole time.

When we got back we opened a toy he got for Artemis where treats fall out when you hit it, till it, etc. She is so gentle. She hasn’t gotten it down yet but I know she will soon.

The next day, after some Artemis cuddles, Frankenstein suggested us to go to a farmers market. I chose a different one than last time, Nassau Bay’s. A couple of teas, a loaf of baked yum and a jar of pickled okra later, we walked into Erma’s. It reminded me of Trader Joe’s. I bought a few more things and we headed off to grab pho from Pho Hoang.

Ethan time continued. Some puzzles and learning words, done silly laying down with Rizzo and some falling asleep in my arms while we watched Tik Tok videos.

He’s even learned how to do harder puzzles, given I find them and tell him where it goes. Maybe he can be my puzzle buddy when he grows up.
