TVB Sniper Standoff and Lunch

I went home this morning and brought along my pasta leftovers. Mum made me some surf clams so I had a couple of those as well. I’m so happy I remembered to bring them back to Scruffy’s to enjoy as a snack later!

Before I started eating and watching TVB’s Sniper Standoff, I handed Rocky a cow’s cheek to chew on since he hasn’t gotten a treat from me in a long time. Poor baby. I wonder if he misses Rizzo.

After hanging out with my parents and June for a bit, I went back to Scruffy’s and we started to cook our first Home Chef meal!

Scruffy wanted to stray away from the recipe a few times but I kept telling him to stick to the recipe. He always makes steak the same way so this was something new to him and the end result was better than he’d expected. Oh, and pairing it with red wine was an added bonus.

After doing this recipe, I noticed how big his family’s plates are! The portions look so tiny on the plate but it was more than enough! I am so stuffed and happy.

If your boyfriend isn’t much into taking you to those fancy Sur La Table cooking classes, then this is a better route.

Tomorrow we will be trying Beef and Pepper Tamale Pie. I cannot wait to see how that turns out and what my thoughts on this meal delivery service.

Busy Body

I had so much human interaction today, I felt like a busy body. Literally drained from it all but it was fun!

This morning started with me cleaning the skimmer (pool filter) and Scruffy getting a call from his friend, Albert. He was in town and wanted to see if we were free for lunch so we headed to Scruffy’s recommendation of Pacific Coast Tacos.

How cute is this Salsa Bar?! I made Scruffy get one of each so I could try it all. Habanero and Roasted Tomatillo was my favourite. Scruffy loved the Tomatillo. The real winner though was none of the above. It was from a bottle they bought, Trappey’s Hot Sauce Ghost Pepper. Albert went and asked where to buy it and they told us the Whole Foods next door. We went and couldn’t find it. I couldn’t find it online either so either they don’t sell it anymore or they just don’t want us to have any of our own.

I can say with confidence that this place is better than Torchy’s Tacos. Go try it out. You will not be disappointed. My favourite was the Bang-Bang Shrimp. I’ve told Scruffy that if Jarro Cafe is too far away this will be our taco place. It’s THAT good.

Before we left our Home Chef delivery arrived. I’m so excited. I’ve always wanted to try one of these boxes type meals. We were in a rush so I wasn’t able to see their packaging fully until after lunch. We opted for the Steak Au Poivre and the Beef & Pepper Tamale Pie. I loved that the meats were at the bottom with some ice packs and divided where the rest of the ingredients were. Even those were packaged individually per meal. They had three ice packs total which can be reused, how amazing!

And look at their insulation system. I’m pretty sure it’s just a lot of recycled cloths but it’s so simple and smart.

We cannot wait to see how everything tastes!

We threw back a few and had some stimulating conversations. It’s been a while since I’ve had those since I’m home all the time nowadays.

Salah's Chili

We all headed to Saleh’s house where Salah was making his chili. We laid it on a bed of Fritos and sprinkled on cheese, sour cream, and jalapenos. Though it isn’t as spicy as Scruffy’s chili, it was equally delicious. Salah even made an eggplant concoction and I was surprised Scruffy liked it!

We stopped by Andrew’s for a hang out session and are now getting ready to watch Scrubs or Game of Thrones, or whatever our hearts desire. The night is young …. right?

A Day With Rizzo and Luna

I had my leftover Creamy Pesto Pasta with Chicken and Broccoli for lunch and we had it for dinner as well. I still have one more serving leftover and I’m excited to have it tomorrow morning!

Then, while I was doing some top secret stuff which I’ll share another day, I gave Rizzo and Luna the cow cheek treats as distractions and they loved them! When I gave one to Rocky last week, it took him about 2 minutes.

Luna finished hers in about 20 to 30 minutes then decided to stare down Rizzo as he finishes his. This is the usual occurrence as Rizzo takes longer which took him almost an hour this time. I love that his little tongue is out.

I brought him with me to pick up some prescriptions and I was surprised he was quiet the whole time. The weather was amazing so I had the sunroof opened and he just stared out the window, watching the people and cars pass by.

Now, it’s more LOVE on Netflix and who knows what else.

[2018] 078/365: Creamy Pesto Pasta

 I offered to cook dinner and decided it was best to make something we already have to save money.

Scruffy’s dad makes a big batch of pesto, measures it all out, then freezes it and I’ve always had the pleasure of taking some home with me. I always put in pasta, chicken, and lots of vegetables, then blindly throw in the bag of pesto to finish it off.

This time, I wanted to try something different and I’m so glad I did because this is the best pesto pasta I’ve had in forever! The only thing I needed to buy was half and half, chicken, and broccoli. Literally, the lazy in me went and bought a rotisserie chicken instead. I decided to go the creamy route – extra fat = extra delicious! It was worth it!

This became a one-pot wonder due to the fact that while my pasta was cooking, I was busy prepping the rest of my ingredients which is usually how I cook. That way by the time pasta is done, I can use the same pot to mix everything together. The only way to go, guys, so that there are less dishes to wash at the end, which is always my goal!

Quick meal after a long day of work!

Ingredients
  • 1 tbsp olive oil
  • 1/2 onion minced
  • 4 cloves garlic minced
  • 2 chicken breasts 1/2 inch strips
  • 1 cup light cream or half and half
  • 1/4 parmesan cheese grated
  • 1/4 cup pesto
  • 1/2 tsp salt to taste
  • 1/4 tsp pepper to taste
  • 4 cups al dente pasta drained
  • 1 cup broccoli florets frozen or fresh
Preparations
  1. Cook pasta in a large pot according to package directions. Add the broccoli to the pasta pot a minute before the pasta is done, then drain and set aside.*

  2. Using the same pot, pour olive oil in a large pan. Add the onion and cook for 3-4 minutes, or until golden. Mix in garlic.

  3. Season the chicken with salt and pepper then add to the mix for 5-7 minutes, or until browned.**

  4. Mix in the parmesan, cream, pesto, salt, and pepper. Simmer for 2-3 minutes.

  5. Stir in the pasta and broccoli until fully combined, simmering for another 2-3 minutes.

  6. Remove from heat and serve.

Notes

*You can add any kind of vegetables, zucchini, peppers, squash, etc.
**For an even faster recipe, use a rotisserie chicken like I did! If so, skip step 3 and add the chicken in with the pasta and broccoli!

[2018] 077/365: A Tex-Mex Lunch

It’s been a lazy day but let’s be real, it’s been a lazy month! We’ve just been watching telly and stuffing our face. We ordered Escalante’s off Door Dash with our $20 credit. It was pretty nice having everything separated so that nothing got soggy but was also annoying having to put everything together.
