I finally splurged and got myself a new phone! It’s the cheapest S21 out there but I’m loving the smallness already. Nothing new but the selfie camera is dang clear. Technology just keeps getting better and better!

Took a couple of days for Emmy’s egg to hatch! I would like a refund. The chick looks NOTHING like the picture. She named it after herself. So silly.

Some goodies I’ve had this week that are worth mentioning.

My yin yuern — it’s hard to find this exact brand so I’ve been having BIG cups worth. I’ve also been craving a lot of raw vegetables.

Flaming hot cheetos mac & cheese is actually not so bad. But the red makes me a little worrisome.

Snow crabs, octopus, and surf clams dipped in Yummy Seafood’s seafood boil sauce. This has been the cheapest way of getting my seafood boils in. Buy the sauce and prep the seafood by myself..

I’ve taken Emmy out a few times to walk Rizzo but a few times, the weather was not cooperative. We sat outside watching the rain in the backyard though.

I took Thursday off so I took Emmy with me to run errands. We dropped off a package, got Starbucks (Dragon Drink makes the coconut milk SO pink!), Hobby Lobby to buy shirts, and Cane’s. She had a LOT of fun and slept a great bunch afterward. When I got home from going out, we walked Rizzo.

I was able to sneak off to meet up with Frankenstein during her nap at Menchie’s. I haven’t had frozen yogurt in a long time so I was excited! We sat and talked for two and a half hours before I had to head home to help Emmy with Kumon and to walk Rizzo.

2021 | Week 57 of Quarantine | Mexican Candy and Jerky from Ricardo

Emmy and I had also stopped at my work parking lot to meet up with Patrick for a package from Ricardo. Jose was coming down to visit his family so Ricardo gave the package to him, who gave it to Patrick to give to me. I didn’t know how much was really in the box until I laid it all out. I am still hesitant to try the candies but I will report that this type of beef jerky is the best I’ve ever had. It’s crunch, hard and super thin. SO good.

June and I were off on Friday so we helped Dad out housework before we left and hung out at Target for a bit. Then we went and had lunch at IHop. Their menu is now one time use. The menu is smaller and they even have potato pancakes. Those were bomb.

Emmy and I made our Disney t-shirts and I made one for June as well with a different design. I did accidentally put June’s design on mine so I had to run to Hobby Lobby Saturday morning to buy another shirt for myself so I can put on my Disney On Ice one as well. Now I have matching shirts with both June and Emmy.

I had lunch with Frankenstein at Crown Seafood. I over ordered (it’s a given) but I had been craving dim sum for a LONG time. We had a good two and a half hour conversation before I had to go.

I went to Mallory’s, changed, then we met Beth at Capri’s for a mani pedi. I hung out at Mallory’s for a bit before leaving. It was nice to get away from the kids. Now I know how parents feel.

This morning, when Emmy woke up, we got ready and headed over to Harry’s Restaurant to have breakfast with Sissy and BIL.

Everything we ordered was DELICIOUS. My favourite were their fries. I know that me saying that makes it sound like their food sucks but the seasoning they use on the fries was freaking amazing. I already want to go back. I love that they have a covered patio.

We went back to Sissy and BIL’s for games. They mostly played and I tried to relax and figure out tickets/parking for Disney On Ice. Emmy and I changed into our matching t-shirts and had a photoshoot in front of the fireplace. Bruno wanted in on the action.

We met Mallory and JJ at NRG stadium. We walked around and got our and went into our seats.

The kids loved the light up wands Mallory got off of Amazon for $5 each. Tips to everyone that’s going to go:

  • You can bring your own light up wands and glow sticks.
  • Since we had kids, we brought in snacks and drinks.
  • Only kids can dress up in costume. We thought that meant, adults couldn’t have mouse ears but that didn’t seem to be the case. Bring your ears!
  • They said it’d be cold but we didn’t wear our jackets. Emmy just had her thin jacket on. It was colder outside than inside but bring something just in case. You never know!
  • We got there an hour early before the show started. This helped us not have to stand in long lines.

They had so many characters there! I kept being amazed at how they’re able to skate with their costumes. Some were even up in the air spinning around. It’s all so crazy but all so cool.

We had taken group pictures with Ariel. Worth the money since we get a digital copy too. She had so much fun she passed out holding her wand on the way home.

We ended the day with the chore chart and for doing so well she got a surprise. She can’t play with it until tomorrow since it’s bed time but she’s excited.

It’s been a VERY eventful week. I am SO pooped and excited to go to bed soon. Hope the little girl feels the same!

2020 | Week 41 of Quarantine | Baked Amish Friendship Bread

Even though I was off this past week, I had to work as needed. So after sending off the reports to the leadership team, I went and baked the Amish Friendship Bread MacKenzie had given us to grow.

The texture is more like a pound cake but still delicious nonetheless. I made one exactly as the recipe asked and another with a lot of dried minced garlic and everything but bagel seasoning with sesame seeds on top. The later was the winner at our house.

Wednesday, I went over to Mallory’s to give them their Christmas presents. They were all excited for “Melissa Crackers”. That’s JJ’s face as he screamed “MELISSA CRACKERS!” with enthusiasm and Jacob’s while he chowed down on one.

Rizzo and I got into the holiday spirit. He wore one of his many Christmas pjs and I put on some Christmas light nails.

2020 | Week 41 of Quarantine | Emmy & Mellie Dee Makes Dinner Rolls

Brudda, SIL, Emmy and Ethan came into town Thursday the 24th. On Christmas day, Emmy and I made dinner rolls from scratch. Always something I wanted to do but never had someone to make it for so it was the best occasion. As Sissy said, “I’ve never seen someone so excited to eat dinner rolls.”

We did a video call with the cousins to open presents together after lunch. Then it was our usual Hot Pot for dinner and open presents after. Sissy and BIL came over in the morning to grab their presents so we did a video call as well.

Mum ended up with me as Secret Santa which meant, I bought my own gifts within the limit set. Brudda and SIL ended up getting me a signed copy of Folklore from Taylor Swift! I officially have an autograph from two of my favourite artists that got me to pick up a guitar and write.

Day after Christmas, SIL, Emmy, and I went to Target and picked up Starbucks since they had 20 percent off. Emmy accidentally got Tammy to spill her drink a minute after she got it in her hands. Luckily, Starbucks was nice enough to remake her drink.

I played guitar as Rizzo cuddled up beside me, took Emmy on a walk with June, put on nail stickers on Emmy, and we ate Crown Kitchen’s pizza for dinner. Their pizza is super thin. I think that it would taste better if we ate it there. Their toppings due fall off which makes for a meh pizza. I don’t hate it but it wasn’t the best I’ve ever had.

We did the drive thru Rudolph’s Light Show for last Christmas light sensation. Santa’s Wonderland was definitely a better drive thru Christmas light show. This wasn’t horrible, but not worth the cost. The drive to get there was longer than the show itself. I think we were done in less than 10 minutes. Emmy had fun though.

2020 | Week 41 of Quarantine | Inkbox Tattoo Prank with Sissy and Brudda

When we got home, we video called Sissy and showed our parents our sibling tattoos. Best prank ever because of how angry our parents were. It was so hard to hide it from our family. I wore long sleeves even though I was sweating and Brudda kept his shirt on always. There where times it slipped but they never noticed.

Brudda bought the Inkbox Freehand kit, I made stencils and drew them all on us. Sissy took off her jacket and messed up the design before it dried so that’s why it looked so bad. Still, Mum couldn’t tell the ugly.

The triangle signifies the three of us. Top is thicker for Sissy, Middle for Brudda, and last one of me. It’s weird but after a while, I don’t even notice it being there.

This morning, Rizzo and I decided to leave with Emmy, SIL and Brudda back to Dallas. Ethan stayed behind. We stopped by Mr. Donuts for breakfast and headed out.

When we got back to Dallas they cleaned the house and built Emmy her Ice Cream Cart Christmas gift. She kept trying to feed me ice cream but I told her I’d get diabetes if she fed me any more.

SIL and I picked up dinner from Densetsu. All the sushi rolls and towers, etc. were delicious and plentiful. Definelty a place I’d order from again.

I had other great foods this week. Los Balitos tacos, Raising Cane’s kids meal, Mala Szechuan, sushi, and steak made by Brudda. Gaining weight but I’m finally off and going to enjoy it. Working tomorrow to send reports to the leadership team, then hoping no one else emails me for the rest of the week.

2020 | Week 40 of Quarantine | Wine Country Christmas Gift from Work

Work was nice enough to send everyone a Wine Country gift basket. It has wine, cheeses, crackers, olives, etc. I haven’t fully opened it up so I’m not sure what the wine is but I’m sure it’ll be delectable.

2020 | Week 40 of Quarantine | Bachelorette & Gift Wrapping with Mallory & Beth | Dunkaroo Dip, Whataburger, Amish Friendship Bread

On Tuesday, after work, I went over to Beth’s, picking up Whataburger for dinner on the way. We had plans to wrap presents while watching an episode of the Bachelorette. Not my type of show, but I love hanging out and doing mindless stuff to get away from the stress of work. MacKenzie couldn’t make it but she was nice enough to drop off some homemade Dunkaroo dip and Amish Friendship Bread Starters for us. I didn’t bring any presents to wrap since I wasn’t about to lug everything but I did help Mallory wrap a little bit of hers.

Plum Paper delivery came! I’ve always wanted to order from this company so I’m excited to see how they work out. I’m going to find time one of these next few days to put in all the birthdays, and future dates I already know about. Eeek!

Since I was off Friday, I did some last minute Christmas shopping for the remainder of the people we have left, then wrapped presents just before midnight while watching Castle. I’ve been obsessed with that show and am already a little sad that it’s almost over. Also, I love to wrap presents. Let me know if you need some assistance.

We were suppose to camp Thanksgiving weekend, but due to the thunderstorm, we rescheduled to this Saturday. Funny enough, it was thundering too. Luckily, we stuck it out and it was a glorious afternoon/night.

Mum, Dad, June, Rizzo, Rocky, and I stopped for some Starbucks then we met up with everyone else (Sissy, BIL, Bruno, Kato, Gordon & Patsy) at Stephen F. Austin State Park around three. I did some photoshoots with Rizzo during our walk with the pups. Kato had crazy leaves stuck on him. He’s so cute!

Before our pup walks, we had set up our tents on our two campsites. The pups all stayed in the car and I was very surprised that Rizzo wasn’t squealing like a pig as he usually does when he’s not next to me.

We got the fire set up for warmth and cooked our foods on the picnic table. We had a camping grill with butane so it made things a little easier. Everyone made their own foods and shared. So much food I didn’t take a picture of everything. These are just the highlights.

I’ve always wanted to try a backpacking meal so when I saw Backpacker’s Pantry’s Chana Masala, I grabbed one. It was much better than I expected for instant Indian food. They say it’s two servings but I felt it could be three or four servings! Definitely something I wouldn’t mind eating again and makes me want to try others.

I love watching the sky change and being in an area where it was pretty dark, it was nice to see so many stars out. Just breaking the cold area destressed me. Oh mother nature. how you always amaze me.

I took a lot of pictures of the pups because they are all so stinking cute. Why yes, Rizzo did get a camping sweater. Glad I did because that, his furry coat, and a giant furry blanket were enough to keep him warm in the 40-degree weather in the wee morning. I’ve always wanted to take the pups camping and I’m glad I finally get to cross it off the list.

We all woke up, walked the pups, made breakfast. We sat and talked for a bit more before we started to clean up. Gordon and Patsy gave us Starbucks Hot Cocoa mixes and a Panettone Cake to take home.

It’s been a crazy weekend but it was a very enjoyable one. Although we didn’t get to do much hiking due to the puddles and such, I want to visit more places and just breathe in nature.

2020 | Week 36 of Quarantine | Emmy Presents

I took two half days and a Friday off to spend with Emmy. I got her a 7 day advent calendar to help countdown when her parents were coming to pick her up to go back home. She had fun opening it every night and got to open day 7 with her parents.

One of the days I was off, I took her to Walgreens where she looked at the candy aisle with glee. I didn’t get her anything though since we had planned to get a happy meal from McDonald’s.

I took off early on Monday and we did a gingerbread mansion together. She had so much fun eating it while working and was so excited to show it to EVERYONE — my parents and June when they got home, Sissy and BIL when they visited, and Brudda and SIL when they came to pick her up.

We did the gingerbread house to get her in the festive mood since I got her tickets to Santa’s Wonderland with the parents and June.

This has always been on my list and I always thought it was very romantic to go on dates like this with a significant other but it never happened so what better time than with everyone I love?

She had fun making faces at everything. I wish they had other foods to offer us but with the pandemic and it being Monday, not many stalls were opened. My parents and June had fun as well and loved the hayride the best since there was A LOT to see. Emmy loved it so much that she asked me to take her to Christmas practically every day after.

I had Friday off and took Emmy to Mary Jo Peckham Park to meet up with JJ for their playdate. They played with rocks and practically spun around in different things.

Per usual, daily walks. Emmy was sad that she was having her last walk with Rizzo. The views have been gorgeous! That bottom right picture has got my heart so happy! It still amazes me how beautiful mother nature is.

Mum and I went to a garden center and I loved walking down the aisle to lit Christmas trees. And I got my second plant. The pot says Cal Cor Plant so I’m not sure exactly what it’s called but I know they’re also known as polka dot plants. They have other colours but these two creates such a Christmas vibe for my bedroom.

Saturday, Brudda and SIL came down and Sissy and BIL came over to celebrate an early Thanksgiving and birthdays of Mum, Brudda, and SIL. I FINALLY got my sushi after a year later! It’s been a no-no in our house since the pandemic but I’m glad we got an exception.

We had ordered Door Dash for Sushi Neato but they were having issues with their app and website. Sushi Neato told us the food had been ready but no person came to pick it up so Sissy and BIL went and got the food. After calling Door Dash, they ended up refunding us the whole meal! Love Door Dash’s service!

Great eats for the week includes Starbucks, heart shaped poached eggs, and some of the best pepppered shrimp!

Now that Emmy is gone, it’s back to my usual scheduled meal times. I’m sure being with her makes me gain weight with the amount of times she eats. This girl has to eat a snack before bed. Literally, eat, pee, brush her teeth, watch a few minutes of a show, then bedtime. Crazy but at least it’s consistent.

When her parents came, she did not want ANYTHING to do with us. Understandable. Luckily, she had to sleep one last night with me since Brudda got Lasik surgery and couldn’t have a crazy girl kick him in the face in the middle of the night.

In the morning, we brushed our teeth and went back into bed and watched Bluey for a bit so that she wouldn’t wake up her parents. I was able to get a few shots of us together and she even told me she loved me and gave me a lot of kisses.

I miss her but I’m also happy to have the whole bed to myself again. Finding activities for a three year old is exhausting but I wouldn’t trade these memories for anything else.

I had little surprises in the mail like a Saint Arnold’s voucher which I don’t have time to use, and Mercedes and Sebastian’s baby shower present for winning a game. Their little one was born this weekend and he is precious!

June and I did our daily walks up until we left for Dallas.

Thursday: there was a 20% off for Tiff’s Treats so I ordered some to Brudda’s house so that when I arrived, I had some to snack on. They ordered Viet food for the family but I opted for just eggrolls and ordered from Lebanese Grill, enough for leftovers.

I haven’t held Ethan since March. He was probably questioning who this random lady is. And he cried BIG, GIANT tears when I held him the first time. You can see it on the top right picture. He started warming up to me though.

Friday: Emmy ended up sleeping with me. She had a great kick playing with my glow in the light nails and kept wanting me to tell Alexa to turn on and off the lights. When we woke up, we took some pictures and silly videos.

Then it was off to see the wizard. Just kidding. Brudda, SIL, Emmy, June, and I picked up McDonald’s and headed to Glenn Rose, Texas. Emmy is living the life. Oh to be a kid again.

We finally made it to Fossil Rim Wildlife Center. We picked up our cup of feed and drove towards the animals.

Emmy came up to the front to sit with me while we went through the place. She had SO much fun feeding the animals and made all these animal noises. Brudda got pecked by an ostrich which was funny but not. Emmy is probably scarred by ostriches now.

We were warned that since it rained so much and the temperature dropped, the giraffes and rhinos may not be visible. We didn’t see a lot of variety but we still had a lot of fun. We saw a giant moose scratching himself with his antlers, and two deers bucking. It was so quiet you can hear when they clash.

After the safari, we headed to Brookshire Brothers to pick up a few things (mostly for the restrooms) and as we drove, we saw Jenny, Le, and Joey speeding past us. It was perfect since we didn’t have signal and couldn’t contact them.

When we checked into Dinosaur Valley State Park, we packed up the wagon and made our way to our campsite. Before and after our tents were set up. I opted for a cheaper tent that wasn’t a pop-up since I didn’t know if I’d like camping. I was super proud of us for setting up the tents very quickly! The only thing I’ll need to get for next time is a tarp for easier cleanup.

We did some sightseeing. One of my hands had more light and so as it turned dark, one hand glowed! So freaking cool.

We also did some walks in the dark to the car so that we could drive to the public restrooms since Emmy isn’t used to popping a squat.

Thanks to Le for cooking our dinner. Cheeseburgers, steaks, and sweet potatoes. We had Turtle chips while we waited and before you freak out, they’re not made of turtles! We also made S’mores. Emmy loves them.

Once it got dark, we all retreated into our tents and bundled up. I watched a movie I had downloaded and played some games before falling asleep. The weather was in the 40s. Thanks to my ski jacket, double layer leggings, wool socks, sleeping mat, and sleeping bag, I was SUPER warm. I can’t say the same for the others.

2020 | Week 32 of Quarantine | Dallas | Dinosaur Valley State Park | Glenn Rose, Texas | Sightseeing | Brudda | Sunrise

If you know me, waking up randomly through the night is my norm so when I finally saw Brudda get up, we both went to take some pictures of the landscape/sunrise. It was nice getting one-on-one time with him as we rarely do nowadays.

When we got back to the campsite, everyone was awake and Emmy was not a happy camper. Pun intended. She was cold and hungry. Once we packed up everything and got back to the car, she was happy to have Pringles in her lap and back in her car seat.

Overall, my first camping trip was a success. Even though it was only for a day, I had a lot of fun. I finally get to cross of camping from my list and I hope I get to do more of it in the future.

Anyone down to camp? Glamping is allowed. I just need more nature and hikes!

2020 | Week 32 of Quarantine | Dallas | Bull Daddy Noodle Bistro | Plano, Texas

When we got back to the house, Sammi was nice enough to order and pick up food from Bull Daddy Noodle Bistro. Fried rice, fried tofu, green onion pancakes, and fried chicken. Nothing fancy but still good to satisfy our hunger.

I put in some Ethan and Emmy time. She fell asleep and I find it super adorable that Rizzo fell asleep next to her. Pluto also came into our room and slept with June and we all took a nap together.

Then we got ready and headed to the studio for Christmas pictures. I went to help and snuck in some pictures just so I can have it for memories. I pulled her around on a sled and she loved it. I wonder if she’ll love real snow.

On our way back to the house, I sat in the back with Ethan and there was a moment where I left my hand in between the seats and Ethan and Emmy both grabbed my hand. My heart. #neverletmego

2020 | Week 32 of Quarantine | Dallas | Skrewball Peanut Butter Whiskey and Boiling Crab

Sammi went and picked up Boiling Crab while SIL picked up some Chinese food. SIL’s parents were coming over to hang out with my parents and Jenny and Le came over as well. We drank some Skrewball which is AMAZING and ate some delicious snowcrabs and shrimp. We talked and caught up for hours and hours before everyone left. Emmy slept with us again and when she woke up she wanted to leave with us.

2020 | Week 32 of Quarantine | Whataburger and Ethan

Sadly that wasn’t the plan as we planned to take Ethan home. But in two weeks, we’ll be switching kids and I’ll get Emmy! We got Whataburger and listened to podcasts the whole ride home. Ethan didn’t have too many fusses on the drive. I can’t wait to see how he is during these two weeks. #dontleaveme

Today marks two years. I’ve learned so much about myself since that day. I had all these expectations of experiences with someone so we had all these memories for when we grew old but I was too mousey to speak up on what I truly needed/wanted. But being single has helped me not to care as much and to just do what I truly want to do. So many experiences are still out there for me to conquer and I am ready. I just hope if I ever love someone again, they’ll be willing to do some outdoorsy stuff because I am loving all the mother nature I’ve been getting these couple of years.
