I was in meetings so much that I had time to do my nails into glow in the dark! Perfect for camping.

2020 | Week 32 of Quarantine | Mercedes & Sebastian's Baby Shower Gift | Saint Arnold Voucher

I had little surprises in the mail like a Saint Arnold’s voucher which I don’t have time to use, and Mercedes and Sebastian’s baby shower present for winning a game. Their little one was born this weekend and he is precious!

June and I did our daily walks up until we left for Dallas.

Thursday: there was a 20% off for Tiff’s Treats so I ordered some to Brudda’s house so that when I arrived, I had some to snack on. They ordered Viet food for the family but I opted for just eggrolls and ordered from Lebanese Grill, enough for leftovers.

I haven’t held Ethan since March. He was probably questioning who this random lady is. And he cried BIG, GIANT tears when I held him the first time. You can see it on the top right picture. He started warming up to me though.

Friday: Emmy ended up sleeping with me. She had a great kick playing with my glow in the light nails and kept wanting me to tell Alexa to turn on and off the lights. When we woke up, we took some pictures and silly videos.

Then it was off to see the wizard. Just kidding. Brudda, SIL, Emmy, June, and I picked up McDonald’s and headed to Glenn Rose, Texas. Emmy is living the life. Oh to be a kid again.

We finally made it to Fossil Rim Wildlife Center. We picked up our cup of feed and drove towards the animals.

Emmy came up to the front to sit with me while we went through the place. She had SO much fun feeding the animals and made all these animal noises. Brudda got pecked by an ostrich which was funny but not. Emmy is probably scarred by ostriches now.

We were warned that since it rained so much and the temperature dropped, the giraffes and rhinos may not be visible. We didn’t see a lot of variety but we still had a lot of fun. We saw a giant moose scratching himself with his antlers, and two deers bucking. It was so quiet you can hear when they clash.

After the safari, we headed to Brookshire Brothers to pick up a few things (mostly for the restrooms) and as we drove, we saw Jenny, Le, and Joey speeding past us. It was perfect since we didn’t have signal and couldn’t contact them.

When we checked into Dinosaur Valley State Park, we packed up the wagon and made our way to our campsite. Before and after our tents were set up. I opted for a cheaper tent that wasn’t a pop-up since I didn’t know if I’d like camping. I was super proud of us for setting up the tents very quickly! The only thing I’ll need to get for next time is a tarp for easier cleanup.

We did some sightseeing. One of my hands had more light and so as it turned dark, one hand glowed! So freaking cool.

We also did some walks in the dark to the car so that we could drive to the public restrooms since Emmy isn’t used to popping a squat.

Thanks to Le for cooking our dinner. Cheeseburgers, steaks, and sweet potatoes. We had Turtle chips while we waited and before you freak out, they’re not made of turtles! We also made S’mores. Emmy loves them.

Once it got dark, we all retreated into our tents and bundled up. I watched a movie I had downloaded and played some games before falling asleep. The weather was in the 40s. Thanks to my ski jacket, double layer leggings, wool socks, sleeping mat, and sleeping bag, I was SUPER warm. I can’t say the same for the others.

If you know me, waking up randomly through the night is my norm so when I finally saw Brudda get up, we both went to take some pictures of the landscape/sunrise. It was nice getting one-on-one time with him as we rarely do nowadays.

When we got back to the campsite, everyone was awake and Emmy was not a happy camper. Pun intended. She was cold and hungry. Once we packed up everything and got back to the car, she was happy to have Pringles in her lap and back in her car seat.

Overall, my first camping trip was a success. Even though it was only for a day, I had a lot of fun. I finally get to cross of camping from my list and I hope I get to do more of it in the future.

Anyone down to camp? Glamping is allowed. I just need more nature and hikes!

When we got back to the house, Sammi was nice enough to order and pick up food from Bull Daddy Noodle Bistro. Fried rice, fried tofu, green onion pancakes, and fried chicken. Nothing fancy but still good to satisfy our hunger.

I put in some Ethan and Emmy time. She fell asleep and I find it super adorable that Rizzo fell asleep next to her. Pluto also came into our room and slept with June and we all took a nap together.

Then we got ready and headed to the studio for Christmas pictures. I went to help and snuck in some pictures just so I can have it for memories. I pulled her around on a sled and she loved it. I wonder if she’ll love real snow.

On our way back to the house, I sat in the back with Ethan and there was a moment where I left my hand in between the seats and Ethan and Emmy both grabbed my hand. My heart. #neverletmego

Sammi went and picked up Boiling Crab while SIL picked up some Chinese food. SIL’s parents were coming over to hang out with my parents and Jenny and Le came over as well. We drank some Skrewball which is AMAZING and ate some delicious snowcrabs and shrimp. We talked and caught up for hours and hours before everyone left. Emmy slept with us again and when she woke up she wanted to leave with us.

Sadly that wasn’t the plan as we planned to take Ethan home. But in two weeks, we’ll be switching kids and I’ll get Emmy! We got Whataburger and listened to podcasts the whole ride home. Ethan didn’t have too many fusses on the drive. I can’t wait to see how he is during these two weeks. #dontleaveme

Today marks two years. I’ve learned so much about myself since that day. I had all these expectations of experiences with someone so we had all these memories for when we grew old but I was too mousey to speak up on what I truly needed/wanted. But being single has helped me not to care as much and to just do what I truly want to do. So many experiences are still out there for me to conquer and I am ready. I just hope if I ever love someone again, they’ll be willing to do some outdoorsy stuff because I am loving all the mother nature I’ve been getting these couple of years.

The Mindy Project & Office Lady Podcast

Breakfast of champions with Sissy, Mum and Dad at Red Truck Cafe. Food was pretty good. It has a homey feel to it and the service was terrific. I had to pack a lot of it to go as well.

Sissy and I drove back home in time for the Texan game. June came to pick me up and I’ve been relaxing, spending time cuddling Rizzo.

Last night Sissy and I binged on three episodes of The Mindy Project. I had watched the first episode and couldn’t get into it but it seems it’s funnier as you keep watching. I’ve been hooked and cannot stop. It reminds me of New Girl and The Office mixed together.

Speaking of The Office, there’s a podcast called Office Ladies. Jenna Fischer and Angela Kinsey rewatch every episode of the show and then comment on it. They give facts and background to the show. It’s hilarious. Sissy and I listened to the first episode together and then we went home and re-watched it. If you loved The Office, you should definitely go listen to it!

Finn and Emmy Meet

Woke up to Brudda telling me the 10 inch Deadpools were for my birthday this year to me replying it could be for two since there so many. He ran to his storage and pulled these small ones out to add to it. I’m going to bed more storage space until I move out!

Finn’s room is now ready! I might just call him Ethan in here since we haven’t locked down a nickname for him. Do y’all like the wall decal? I took what brother sent me and changed it just a tad and cut it out and applied it. I’m open for business! Holler at me.

XO Coffee & Bistro | Plano, Texas

We dropped Sissy at the hair salon then Mum and I went to run some errands before going to XO Coffee and Bistro. Iced latte for me and a mocha and pastry for Mum. Then we walked around some local shops before Sissy was done.

Zero Degrees & Beard Papas | Plano, Texas

We stopped by Beard Papas and Zero Degrees to pick up lunch for the family. Beard Papas gave out free mugs since January 2nd was cream puff day which was pretty awesome.

Japanese Single Malt Whiskey

Emmy wanted to get out of the house so Sissy and I took her to Target. We went home and played with her for a while before Emmy finally got to meet Finn. I heard she was unsure first but warmed up quick.

Jenny and Le came over and Brudda opened the Single Malt Whiskey they brought from Japan. It was super smooth. We all hung out for a long while before we all headed off to bed.

Tomorrow we head home. Can’t wait to see Rizzo!!

2019 SIL’s Birthday

I wasn’t able to sleep all night so I stayed up playing games and watching telly while Rizzo slept like a log next to me. Moments like these make my heart happy.

We started putting up the rest of the drywall. I give props to all the renovators, housebuilders, and construction workers because it’s such hard work.

Ninja Ramen | Plano, Texas | Door Dash

We ordered from Ninja Ramen through Door Dash. Surprisingly good and Emmy even ate a lot! I would order from here again, especially because their level of spicy is on point. After the quick lunch, we were back at it renovating the attic. Then I took a shower, shopped online, took a quick cat nap, and played with Emmy while parents, Brudda and SIL were off buying a new car.

Gogiya | Plano, Texas

Dinner was at Gogiya to celebrate SIL’s birthday a day early. You could choose all you can eat for Korean BBQ or Hot Pot. We first wanted Korean BBQ until we realized it’d be an extra $14 per person if we wanted the good meats so we switched over to hot pot.

They had a salad bar you can eat from. Mostly vegetables, seafood, and hot sauces. So freaking good. They could do better with their choice of sauces though.

Choosing hot pot was a good idea. Everyone had their own personal hot pot to cook from. I got full faster because I had my own pot where no one stole what I put in! I wish we could do something like this at home but it’d be super expensive.

June and I are currently watching a movie in the media room. Brudda, SIL, and I were going to go to Richard’s annual Friendsgiving but we were all super tired from a busy day, not to mention the drive back I have to make.

I cannot believe the holiday is already over. Luckily I have all my Fridays off for the rest of the year which means only a four day work week. Yippee!

2019 | Thanksgiving in Dallas

McDonald's with Emmy and SIL

We got into Dallas last night. Mostly to drop off Emmy but to also spend Thanksgiving together. Mum and June went and got us breakfast at McDonald’s – first time Mum’s ever drove in Dallas! I shared above with Emmy and SIL.

Attic Remodel with Brudda and Dad

Then Brudda put me to work in the attic with Dad. He’s transforming his two attics into storage rooms so we’ve been putting in drywall. I worked for a good while before they were able to handle it themselves but there is still a lot of work to do for tomorrow.

They kept working but the rest of us went to Cris and John Vietnamese Street Food for lunch. They had such cute decor and their Horchata was on point. It’s a fusion between Vietnamese and Mexican.

We ordered almost everything off the menu. I won’t say everything was great but I’d come back for the pho.

Patti La Belle Sweet Potato Pie

We even stopped by Wal-Mart because I really craved the sweet potato pie from last year at Richard’s Thanksgiving. They sell the mini version as well and I found it so freaking adorable. I was told to put it back down though and stick with the big one.

We all tried to shop online and take naps as well but Emmy kept me up. Soon enough, Brudda and I went to Wal-Mart so that I could get my 10-inch gold Deadpool Funko. He bought the other four variations for me this morning as early birthday presents for the next few birthdays.

Then it was Thanksgiving at Hunan Bistro. No usual Thanksgiving feast here though we did get some wine. We ordered so much that I am so stuffed. My favourite was the fried intestines. I know you’re probably thinking it’s gross, but it’s all in your head.

The kids went next door to Boba Ave 8090 while everyone else went back to their respective homes. We talked about weddings and random things before heading home.

June and I finished our movies and I went and bought more things as Christmas presents. I hope everyone likes theirs!
