Crumbl Cookies | Katy, Texas | Oreo, Chocolate Chip, Peanut Butter, Sugar Cookie with Almond Icing

Work was so crazy today that I had to cancel my lunch plans. Lunch plans that I rarely get to make. So when I get a text that Mallory picked up some cookies from the new bakery, Crumbl Cookies, my heart was happy.

She got Oreo, Chocolate Chip, Peanut Butter, and Sugar Cookie with Almond Icing. I’m not sure what they are called but that’s how I’d describe it.

My favourite was the Oreo as there were little pieces inside. The chocolate chip was the worst in my opinion, a big let down. As for the peanut butter, if they put in chunks of Reese’s like they did in the Oreo, I think it would have been better. The almond icing on the sugar cookie was very overpowering but it wasn’t so bad.

Tiff Treats is still our number one favourite place but if we had to pick gourmet then I guess they could do.

Jacob fared well in my hands. I gave him back before he started bawling again. JJ has liked me more ever since I read him bedtime stories. Or maybe he’s growing up and realized I’m amazing.

Chocolate Chip Cookie Pie | Before

On the 26th of March, some of the FSA Families got together for pictures and decided to do a potluck. Everyone wanted cookies so I figure they wouldn’t mind a new take on it.

Chocolate Chip Cookie Pie

Ingredients:

  • 1 unbaked pie crust, homemade or store bought
  • 2 large eggs
  • 1/2 cup flour
  • 1/2 cup white granulated sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup butter softened (1 1/2 sticks)
  • 1 cup chocolate chips
  • 1 cup pecans or walnuts (optional)

Preparation:

  1. Beat eggs in a large mixer until foamy. Add in flour and sugars. Beat until well blended.
  2. Beat in softened butter. Stir in chocolate chips and nuts. (I didn’t put in nuts since I had friends that were allergic.) Stir.
  3. Pour into pie crust (thawed). Bake at 325°F for about 50-55 minutes. Let cool before eating.

Mine came out a little undone in the middle but a lot of people reminded me that pies are that way in the middle and they gobbled it up regardless.

Red Velvet Chocolate Chip Cookies

Late night craving to bake equals too late for a run to the store. Knowing a box of red velvet cake mix was available in my pantry, I surfed the web for a non-traditional cake and cupcake method and landed on cake-like cookies!

The outside is crunchy and the inside is a little chewy. A perfect cookie. Mmmmm! My family gobbled it all up – thank goodness.

Easy, delicious cake box cookies.

Course: Dessert
Servings: 24 cookies

Ingredients
  • 1 box red velvet cake mix (Duncan Hines)
  • 1/3 - 1/2 cup oil
  • 1 cup chocolate chips
  • confectioners sugar (optional)
Preparations
  1. Prep baking sheets with parchment paper and preheat oven to 350°F. In a large bowl, mix eggs, cake mix, and oil.
  2. Scoop and roll the dough with your hands. Flatten it out and put a few chocolate chips in the center. Roll it back up and place on the cookie sheet.*

  3. Bake approximately 15 minutes. Cookies are finished when you can slide them without the bottoms sticking to the baking sheet.

  4. Optional: Sift confectioners sugar on top right when it comes out of the oven so it sticks.

Notes

*If you prefer, you can put chocolate chips in after mixing the dough instead of doing the rolling, flattening, rolling method.
