Here is the other dessert I made. This one is divine and I know I will make multiple more times in the future. They stole the show and I personally loved it

Is it shocking that I’ve never made or eaten a blondie before? It’s really just a brownie but made with brown sugar to create that blonde color.

This is the other dessert I made. It was divine and I know I will make multiple more times in the future. They stole the show and I personally loved them which is saying a lot coming from a non-sweets lover.

These are my favorite m&ms! But I can only have a few before I get sick of them since I’m not a lover of sweets.

M&M Blondies

Ingredients:

  • 1 1/4 cups unsalted butter
  • 2 cups packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 4 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 2 1/2 cups all-purpose flour
  • 1 bag mini M&Ms (with a few reserved for the top)

Preparation:

  1. Preheat oven to 350°. Spray a 9×13 inch pan with cooking spray.
  2. Heat butter in a small saucepan over medium heat until it browns and begins to smell nutty. Make sure not to burn it! Allow the butter to cool lightly.
  3. In a large mixing bowl, combine the browned butter, brown sugar, and granulated sugar.
  4. Stir in eggs, vanilla, and salt.
  5. Add in flour and stir until just combined.
  6. Add in M&Ms and stir to combine.
  7. Pour batter into prepared pan and smooth the top with a rubber spatula. Sprinkle a few additional M&Ms on top.
  8. Bake for 25-30 minutes. Let cool completely before cutting.

My final product is just as gorgeous.

Seriously, make and bring this to the next party. Adults and kids alike will love them.

Just make sure you have a very good knife to cut through those M&Ms. Plastic knives do not cut it (pun intended). I learned the hard way as I broke a plastic knife in half and one of my co-workers broke another one in thirds.

In Allie’s recipe, she had coconut shreds put in … but I’m not a big fan of coconut and was afraid some people might be allergic so I opted out of it.

Recipe | S’mores Bars

This is one of the desserts I made on my last day. I loved the other one better than this one so I’m posting the one I simply just like.

[Recipe from Chocolate and Carrots]

S’mores Bars

Ingredients:

  • 16 sheets of graham crackers
  • 25 big marshmallows
  • 4 Tbsp unsalted butter
  • 1 cup mini chocolate chips

Preparation:

  1. Spray cooking spray in an 8 –inch pan.
  2. In a food processor, crush the graham crackers completely.
  3. In a large bowl, combine marshmallows and butter. Microwave in 15-second intervals, stirring in between until completely melted.
  4. Put in the melted mixture in the food processor with the graham crackers and grind until blended.
  5. Knead in the chocolate chips and push into the pan.
  6. Place into the refrigerator until hardened and cut into squares.

The reason I was not a big fan of this recipe is because it was hard to work with. Everyone knows when marshmallows are melted, you have to work fast, else everything will be super sticky and hard. Lesson learned.

Plus on top of that, it was so hard to cut!

S'mores Bar

Just look at it … it doesn’t look that appetizing to me. And I didn’t have the pretty layers like Caroline did in the previous picture. All in all, it was a fail.

When it came time to eat it, it was very chewy and for some, it felt hard because they didn’t have teeth of a teenager anymore. Whoops. Really need to think of your audience before making something. Lesson learned.

If I ever make this again, I might just use fewer marshmallows so it’s not as hard so it’s more of a cookie texture and less of a bar of chewiness.

But don’t get me wrong. It really was tasty. I’m just a hard critic when it comes to my own foods.

Recipe | Honey Poppy Seed Cake

How is it already AUGUST?! Summer, please stay a bit longer!

Sunday, after Skyping with Sissy and BIL, Mum and I felt like baking. I’m sure it had to do with the fact that they were cooking dinner and we wanted to eat as well.

Honey Poppy Seed Cake

Ingredients:

  • oil or melted butter, for greasing
  • 1 1/2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 3/4 cup unsalted butter, softened
  • 1/2 cup superfine sugar
  • 6 Tbsp honey
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • 2 Tbsp poppy seeds
  • 2 Tbsp lemon juice

Preparation:

  1. Preheat oven to 325°. Grease a loaf cake pan.
  2. Sift flour and baking powder into a large bowl. Add in butter, sugar, 4 Tbsp of honey, eggs, and vanilla extract.
  3. Beat until mixture is smooth. Stir in poppy seeds and lemon juice.
  4. Pour mixture into the pan and smooth the surface. Bake in preheated oven for 40-50 minutes or until risen and golden brown. (Ours baked for a little longer about 1 hour and 10 minutes until it set. So all ovens vary. Trial and Error!)
  5. Let cool in pan for 20 minutes, then turn out carefully and finish cooling on wire rack. To serve, warm remaining 2 Tbsp of honey and drizzle over cake then cut and serve.

Recipe | Nutella Swirled Fudge Brownies

I’ll be seeing Rose and her family, along with Michelle H., soon and I wanted to bake some brownies for them. Brownies because I have a box of mix sitting around. But I did something different to them.

Nutella Swirled Brownies | Fudge Brownie Mix

I am a billion and fifty percent sure I did not make this up. I am certain a lot of people already do this. Add Nutella.

All I needed were eggs, oil, and water. Easy Peasy!

After mixing it all together I added a big heap of cinnamon and poured the batter into a 9×13 pan.

Then I swirled in a bunch of Nutella. Yum!

This is what came out of the oven. I promise there were better swirls in there!! I love when brownies have a crackle on the top. Hopefully, it tastes better than it looks.

Recipe | Overnight Oats In A Jar

I have  never been a lover of oats, especially oatmeal. But I took the plunge and made Overnight Oats in a Jar since my knockoff Nutella was all gone.

Overnight Oats In A Jar

Ingredients:

  • Almost empty jar of spread
  • Rolled oats
  • yogurt
  • milk
  • Honey Nut Cheerios
  • blueberries
  • strawberries
  • peanut butter

Preparation:

  1. Put rolled oats, yogurt, milk, and peanut butter (I didn’t have enough leftover spread in my jar) into the almost empty jar of spread.
  2. Put into fridge overnight.
  3. Add Honey Nut Cheerios, blueberries, and strawberries on top.
  4. Eat.

I added a little bit of chocolate syrup because I always wanted to squirt some of that on something.

I think I change my mind on oats. It was so freaking delicious. I didn’t mix it well enough though since the bottom didn’t have much flavour. And this breakfast kept me so full for so many hours. Sahweet!

Rocky Asleep

Rocky is so lazy! He took up half the bed as I got busy working on things knowing I get to sleep in due to not having to work on Friday.

I just got done with my C25K: Week 8! Felt good not giving up. I decided to give the treadmill another try. Instead of listening to music, I put on Netflix and the run went way faster than expected. I guess running on the treadmill is okay as long as I have something better to do.

Now I’m running late – no pun intended. Got to get ready and head over to Michelle’s house.
